1. Preheat oven to 375 F.
2. Grease muffin tins (18 regular size muffins) with butter and coat bottom and sides lightly with flour.
3. Cream butter with 1-¼ cup sugar in large bowl.
4. Add 3 eggs and stir to combine.
5. In small bowl, sift together flour, baking powder, salt and 1-½ tablespoons ground cinnamon.
6. Alternate stirring in flour mixture and apple cider into egg mixture.
7. Stir in chopped apple pieces.
8. Pour batter into the muffin cups.
9. Combine remaining ¼ cup sugar with remaining teaspoon cinnamon in small bowl.
10. Sprinkle cinnamon mixture over batter.
11. Bake 30 minutes in preheated oven.
