Brunch Potatoes

Delicious potato casserole with turkey sausage, green and red bell pepper, corn, onion, garlic, and fresh ground pepper.
Ingredients -
 

7 medium Baking Potatoes, peeled and cut into 1/2 inch cubes, boiled until tender, drained
1 teaspoon Vegetable Oil
1/2 cup chopped Green Bell Pepper
1/2 cup chopped Red Bell Pepper
1/2 cup Fresh or Frozen Whole Kernel Corn
1 small White Onion, chopped
2 Garlic cloves, minced
1/2 pound Smoked Turkey Sausage Links, cut in bite size pieces
2 tablespoons Olive Oil
1/4 teaspoon Fresh Ground Black Pepper

 
Preparation:
 

1. Preheat oven to 350 F.

2. In large skillet, saute peppers, corn, onions and garlic in vegetable oil until tender.

3. Add sausage to vegetable mixture.

4. Over medium heat, cook 7-9 minutes, or until cooked through.

5. Add potatoes to sausage mixture.

6. Stir in olive oil and fresh ground black pepper.

7. Pour potato mixture into large non-stick baking dish.

8. Bake uncovered for 30-35 minutes.

Smoked Turkey Sausage Links
Turkey sausage is healthier than other sausages, but there isnt any other reason you cant substitute a dfferent sausage for the turkey. Other sausages will have more oil that cooks off into the casserole, that is a consideration to be aware of.
