Caramelized Onions

Slow cooked onions brings out the sugar and turns them a deep brown color. The flavor of the onion mellows and becomes rich and sweet. Carmelized onions are perfect for a brunch pizza, in omelets and quiches, in soups and stews and on burgers and sandwiches.
Ingredients -
 

6 slices Bacon, chopped
2 Sweet Onions, cut into thin strips
2 tablespoons Molasses
1/4 teaspoon Coarse Salt
1/4 teaspoon Fresh Ground Black Pepper

 
Preparation:
 

1. Cook bacon in skillet over medium heat until crisp.

2. Remove bacon and drain on paper towels.

3. Remove all but 1-tablespoon bacon fat. Reduce heat to low

4. Add onion to skillet. Cook onions 15 minutes, or until onion is soft and caramel colored. Stir constantly.

5. Stir in molasses.

6. Season with salt and pepper.

7. Place caramelized onions in serving dish. Sprinkle with crumbled bacon.

Olive Oil
The onions can alternately be caramelized using 100% pure olive oil, 100% pure is the most expensive olive oil you can buy.

Heavy Skillet
A heavy skillet, like cast iron, is ideal for caramelizing onions. The heavy metal keeps the heat even. A large non-stick saute pan will work well, as it is imperative the onions slow cook and dont burn.
