Chutney Chicken Salad

Easy and delicious chicken salad with orange, peanuts, celery, and cucumber. Chicken salad is tossed with homemade chutney dressing. Banana slices add the finishing touch.
Ingredients -
 

2 cups diced Cooked Chicken
1 cup sliced Celery
1/2 cup scored Cucumber slices
1 large firm Banana, sliced
1 Orange, peeled, sliced
1/2 cup Peanuts
Chutney Dressing
Watercress

 
Preparation:
 

1. In a large serving bowl, mix cooked chicken, celery, cucumber, orange and peanuts.

2. Toss salad with chutney dressing.

3. Chill until ready to serve.

4. Add banana slices just before serving

5. Arrange watercress on individual serving plates.

6. Spoon salad on beds of watercress.

Cooking Tip

Chutney Dressing
In small mixing bowl, combine 2 tablespoons chopped scallions, 1/2 cup sour cream, 1 teaspoon grated orange peel, 1 teaspoon lemon juice, 1/4 teaspoon curry powder, 1/4 teaspoon salt, 1/4 teaspoon pepper. Chill 1 hour to blend flavors.

Set out baskets with biscuits and rolls, plates with butter, serving bowls with jellies and jams. Guests will have food available to them immediately when they arrive.
