Soft Apple Butter Delights

Soft apple cookies make a nice brunch treat. Apple butter, brown sugar, and nutmeg flavor these quick and easy apple and walnut cookies. Very easy recipe to double or triple in size.
Ingredients -
 

1 cup Butter
2 cups packed Brown Sugar
2 Egg
1/2 cup Brewed coffee, room temperature
3 1/2 cups All-Purpose flour
1 teaspoon Coarse Salt
1 teaspoon Baking Soda
1 teaspoon Ground Nutmeg
2 cups Apple Butter
1 cup chopped Walnuts

 
Preparation:
 

1. Mix together butter and brown sugar in a large mixing bowl.

2. Add 1 egg at a time, mixing each one in very well.

3. Stir in coffee.

4. Mix the flour, coarse salt, baking soda, and ground nutmeg.

5. Gradually add flour mixture to eggs.

6. Stir in the apple butter and the walnuts.

7. Refrigerate dough for 1 hour.

8. Preheat oven to 400 F.

9. Drop cookies onto lightly greased cookie sheets, equal distance apart.

10. Bake 10-12 minutes, or until cookie edges are firm.

11. Remove from oven, place cookie sheet on wire rack.

Cooking Tip

Apple Butter
Add 16 to 20 peeled and sliced large apples, 2 cups sugar, 2 cups apple cider, to crock pot. Put setting on medium high and cook 8 hours. Mash. Add 2 teaspoon cinnamon, 1/2 teaspoon cloves. Stir well.
