Tropical Lobster Avocado Salad

Lobster with tropical fruits and a spicy sweet sauce served in martini glasses make this delicious seafood salad a visual and taste bud knock out. Diced lobster with papaya, mango, avocado, pineapple, tomato, red onion and chives, mixed with a splash of limejuice, brown sugar, hot pepper sauce, sea salt and a drizzle of olive oil.
Ingredients -
 
meat from 1 Large Lobster Tail, cooked and diced into bite size pieces.
1 Ripe Avocado
1 Ripe Fresh Mango
¼ Fresh Pineapple
¼ Fresh Papaya
2 Vine-Ripened Tomatoes
2 Chives, finely diced
1 small Red Onion, finely diced
2 tablespoons Limejuice
1 tablespoon Brown Sugar
1 teaspoon Hot Pepper Sauce
Sea Salt
Olive Oil
 
Preparation:
 

1. Dice avocado, mango, pineapple, papaya, and tomato into ¼-½” pieces, add to large glass mixing bowl.

2. Add diced onion and chives to fruit. Stir to combine.

3. Add limejuice, brown sugar, hot pepper sauce, and sea salt. Stir to combine.

4. Fold in lobster.

5. Drizzle olive oil over top.

6. Chill and serve.

Cooking Tip

Hot Pepper Sauce
For a little more heat, remove the stem and seeds from a jalapeno and finely dice. Add jalapeno to the salad when you add limejuice mixture.
