Banana Split Muffins

Bananas and semi-sweet chocolate chips, chopped nuts and maraschino cherries highlight this creamy baked muffin.

Ingredients -

1-1/2 cups All-Purpose Flour
1 cup Granulated Sugar
1 teaspoon Baking Soda
1 teaspoon Coarse Salt
1 Large Egg
1/2 cup Miracle Whip Dressing
3 ripe Bananas
Miniature Semi-Sweet Chocolate Chips
chopped Nuts
Maraschino Cherries

 
Preparation:

1. Add all-purpose flour, sugar, baking soda and coarse salt to large bowl.

2. In separate bowl, beat egg with fork. Stir in miracle whip dressing.

3. Stir egg mixture into flour mixture, just until moistened. Do not over stir.

4. Stir in bananas.

5. Spoon batter into greased muffin tin or paper-lined muffin tin.

6. Fill each cup ¾ full.

7. Sprinkle each cupcake with chocolate chips and nuts.

8. Bake 20-25 minutes. Remove from oven. Press cherries into top of muffins.

Muffin Making
Use fresh ingredients, from the flour, eggs and milk, down to getting new baking powder and baking soda, if they have been around 6 months.

Muffin Mix
Do not over mix batter. As the lumps will dissolve during baking, stir until the dry ingredients are moistened, but still lumpy.
