Cape Cod Berry Muffins

A great offering for brunch, this muffin features dried cranberries and a sprinkling of coarse sugar.

Ingredients -

1-3/4 cups All-Purpose Flour
2-1/2 teaspoons Baking Powder
1/4 teaspoon Salt
6 tablespoons Sugar
1 Large Egg
3/4 cup Whole Milk
1/3 cup Vegetable Oil
1/2 cup Dried Cranberries and 1/2 cup Dried Blueberries, mixed with 2 tablespoons of Sugar
Coarse Sugar

 
Preparation:

1. Preheat oven to 400 F.

2. Add all-purpose flour, baking powder, salt and granulated sugar to large bowl.

3. In separate medium bowl, beat the egg, milk and oil together.

4. Stir egg mixture into dry ingredients, only until moistened. Do not over mix.

5. Stir in dried cranberry mix.

6. Grease muffin tin or line with paper liners.

7. Sprinkle with coarse sugar.

8. Bake 15 minutes.

9. Remove to wire rack. Cool 10 minutes.
