Carrot Bread

Mixture of dry ingredients prepared from sugar, flours, baking powder, baking soda, salt and cinnamon is mixed with applesauce, egg substitute and vanilla. Carrots and walnuts are folded in batter is poured into prepared pan. Bread is baked until firm and golden brown.

Ingredients -

1 cup White Sugar
1 cup All-Purpose Flour
1/2 cup Whole Wheat Flour
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1 teaspoon Salt
1 teaspoon Ground Cinnamon
3/4 cup Unsweetened Applesauce
1/2 cup Egg Substitute
1 teaspoon Vanilla Extract
1 cup shredded Carrot
1/4 cup Walnuts, chopped

 
Preparation:

1. Coat an 8-in. x 4-in. x 2-in. loaf pan with nonstick cooking spray and dust with flour.

2. Set aside.

3. Combine the sugar, flours, baking powder, baking soda, salt and cinnamon in a bowl.

4. Combine the applesauce, egg substitute and vanilla in another bowl.

5. Stir into the dry ingredients until just moistened.

6. Fold in the carrots and walnuts.

7. Pour into the prepared pan.

8. Bake at 350 degrees for 50-55 minutes or until a toothpick poked in the center comes out clean.

9. Cool for 10 minutes before removing from pan to a wire rack.
