1. Combine the pie filling, pecans and cinnamon in a small bowl.
2. Mix well to combine.
3. Spread 2 tablespoonful's down the center of each crepe.
4. Roll up tightly, jelly-roll style.
5. Place each crepe, seam side down, in a large rectangular baking dish that has been lightly greased with butter.
6. Bake, uncovered, for 12 to 14 minutes at 375 degrees, or until heated through.
7. Combine the egg, cream, sugar and extracts in a microwave-safe bowl.
8. Cover with Saran wrap and microwave for 5 minutes on 1/2 power.
9. Stir every 2 minutes.
10. Cool.
11. Serve drizzled over crepes.
