1. In a large bowl, whisk together the flour, eggs, milk, salt and vegetable oil until smooth.
2. Place a small skillet, coated with non-stick cooking spray, over medium heat.
3. Pour 1/4 cup of batter into the pan and tilt to coat the bottom of the pan evenly with batter.
4. Cook until the bottom is lightly browned.
5. Flip, cook for 15 seconds, then spoon 2 tablespoons of the berry mixture into the center.
6. Cook for an additional 2 minutes.
7. Fold the crepe in half and remove to a plate.
8. Dust with powdered sugar and serve.
