Blackberry Lemon Crisp

 

Ingredients -

2 cups Fresh or Frozen and Slightly Defrosted Blackberries
1/2 teaspoon Lemon Juice
1/4 cup Sugar
1 tablespoon plus 1/3 cup Whole Wheat Pastry Flour
1 pinch of Salt
1/3 cup Rolled Oats
1/4 cup Lightly Packed Brown Sugar
1/4 teaspoon Ground Cinnamon
1 teaspoon Finely Grated Lemon Zest
3 tablespoons Cold Butter, chopped into small pieces

 
Preparation:

1. Turn the oven to 375 degrees and preheat.

2. Spray a 1 quart baking dish with nonstick cooking spray.

3. Combine the blackberries, lemon juice, sugar, flour and salt in a small bowl and mix well.

4. Pour the mixture into the prepared dish.

5. Combine the oat, 1/3 cup flour, brown sugar, cinnamon and lemon zest in a small bowl and mix well.

6. Add the butter and cut in with a pastry blender.

7. Sprinkle the crumbs over the top of the dish.

8. Place on a cookie sheet and bake until the filling is bubbly, which takes about 20 to 25 minutes.

9. Serve with ice cream or whipped cream.
