California-Style Huevos Rancheros

 

Ingredients -

1 tablespoon Olive Oil
1/2 teaspoon Salt
4 Corn Tortillas
4 to 8 Eggs
2 Ripe Avocados, peeled and thinly sliced lengthwise
1/2 cup Grated Monterrey Jack or Cheddar Cheese
4 Lettuce Leaves, coarsely chopped
1/4 teaspoon Ground Mexican Oregano
3/4 teaspoon Ground Cumin
1/2 Medium White or Yellow Onion, chopped
3/4 cup Tomato Juice
1 Garlic Clove, minced
3 Whole Chilies, roasted, peeled and chopped, OR 4 ounces Canned Whole Green Chilies, chopped

 
Preparation:

1. Add the oil to a medium saucepan and heat to hot.

2. Add the onion and cook until translucent.

3. Add the tomato juice, garlic, herbs, chilies and salt and mix well.

4. Turn the heat down to low and simmer for 10 minutes.

5. Turn the oven to 350 degrees and preheat.

6. Wrap the tortillas in foil and place them in the oven to warm.

7. Poach to eggs in a frying pan with hot water and 2 tablespoons of vinegar and 1 teaspoon salt.

8. Break the egg into a small cup and stir the water in the pan vigorously.

9. While stirring, pour the egg into the water.

10. Add the remaining eggs then cover.

11. Lay 1 tortilla on a plate, top with avocado and the poached egg.

12. Spoon the sauce over the op and sprinkle with cheese.

13. Place in the oven until the cheese has melted.
