Leek and Ham Breakfast Casserole

 

Ingredients -

1 cup Thinly Sliced Leeks
4 tablespoons Butter
5 cups (3/4-inch) French Bread Cubes
1-1/2 cups Shredded Swiss Cheese
1-1/2 cups Finely Chopped Cooked Ham
1/3 cup Chopped Red Bell Pepper
4 Eggs, beaten
1-3/4 cups Whole Milk
1/4 teaspoon Sea Salt
1/4 teaspoon Fresh Ground Black Pepper

 
Preparation:

1. Add the butter to a medium saucepan and melt over medium-high heat.

2. Add the leeks and cook until tender.

3. Spray an 8 x 8 inch baking dish with butter flavored cooking spray.

4. Arrange half of the French bread cubes in the prepared dish.

5. Sprinkle the leeks on top followed by the cheese, ham and red bell pepper.

6. Arrange the remaining French bread cubes on top.

7. Whisk together the eggs, milk, salt and pepper in a bowl.

8. Pour the egg mixture over the bread.

9. Cover and chill overnight.

10. Turn the oven to 325 degrees and preheat.

11. Bake until a knife inserted into the center comes out clean, which takes about an hour.

12. Let the casserole sit for 10 minutes, then slice and serve.
