Asparagus Frittata with Green Onion and Mozzarella

 

Ingredients -

1-1/2 pound Asparagus
2-1/2 cup Nonfat Cottage Cheese
4 ounces Part-Skim Mozzarella
1 Green Onion, coarsely chopped
1/2 cup Fresh Parsley
1 Egg
3 Egg Whites
1 teaspoon Stone Ground Mustard
1-1/2 teaspoons Grated Fresh Parmesan Cheese

 
Preparation:

1. Turn the oven to 325 degrees and preheat.

2. Spray nonstick cooking spray on a 10 inch quiche pan.

3. Trim the asparagus and cut into 2 inch pieces.

4. Place them in a steamer and steam for 5 minutes or until tender.

5. Allow the asparagus to cool, then chop into pieces, reserving the tips.

6. Add the next 7 ingredients to a food processor and process until smooth.

7. Fold the chopped asparagus into the mixture then transfer to the prepared pan.

8. Neatly arrange the asparagus tips on top and sprinkle with the grated Parmesan cheese.

9. Bake until set which takes about 1 hour.
