1. Turn the oven to 400 degrees and preheat.
2. Add the oil to a medium skillet and heat over medium-high heat.
3. Add the mushrooms and sauté until tender.
4. In a large bowl, combine the next 8 ingredients and mix well.
5. In a separate bowl, whisk the egg whites and salt together until soft peaks form.
6. Fold the egg whites into the macaroni mixture.
7. Spray a 9 inch round cake pan with nonstick cooking spray.
8. Transfer the mixture to the prepared pan.
9. Top with the remaining 1/2 cup shredded cheese.
10. Bake for 20 to 25 minutes.
11. Serve and enjoy.
