1. Turn the oven to 350 degrees and preheat.
2. Drain the crab and slice into small pieces.
3. Add the butter to a large skillet and melt over medium heat.
4. Add the next 4 ingredients and sauté until tender.
5. Sprinkle with salt and pepper and mix well.
6. Cover and sauté for 6 to 7 minutes.
7. Whisk together the milk, eggs and cheese in a large bowl.
8. Spray a casserole baking dish with nonstick cooking spray.
9. Pour the vegetable mixture and the egg mixture into the prepared dish.
10. Bake until brown, which takes about 20 minutes.
11. Serve garnished with parsley.
