1. Turn the oven to 450 degrees and preheat.
2. Sprinkle salt and pepper on the eggs and mix well.
3. Add the butter to a large cast iron skillet and melt over medium-high heat.
4. Pour the eggs into the skillet and stir until loosely scrambled.
5. Evenly spread out the eggs in the bottom of the pan.
6. Spread the artichokes, peppers and parsley over the eggs.
7. Sprinkle the cheese on top.
8. Bake until the edges are set and lightly browned, which takes about 6 to 8 minutes.
9. Cut into wedges and serve.
