1. Turn the oven to 350 degrees and preheat.
2. Add the oil to a large cast iron skillet and heat over medium-high heat.
3. Add the onion and fry until soft.
4. Whisk together the eggs, salt, pepper, basil, spinach, parsley and parmesan cheese in a large bowl.
5. Reduce the heat to low, pour the mixture into the skillet and cook until the egg begins to set.
6. Lift the bottom of the frittata with a spatula and let the uncooked eggs slide into the bottom.
7. After 3 minutes arrange tomatoes and olive slices on top.
8. Place the skillet into the oven and cook until the eggs are firmly set.
9. Slice into wedges and serve.
