Spinach and Parmesan Cheese Frittata Topped with Tomatoes

 

Ingredients -

1-1/2 cups Fresh Spinach Leaves, coarsely chopped
3 tablespoons Light Olive Oil
3/4 cup White Onion, thinly sliced
8-9 Large Eggs
1/2 teaspoon Salt
1/4 teaspoon Black Pepper, freshly ground
1/4 teaspoon Sweet Basil
2 tablespoons Fresh Parsley, minced
1/3 cup Parmesan Cheese
2 Medium Vine-Ripened Tomatoes, thinly sliced
6 Green Olives, pitted, ripe and thinly sliced

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Add the oil to a large cast iron skillet and heat over medium-high heat.

3. Add the onion and fry until soft.

4. Whisk together the eggs, salt, pepper, basil, spinach, parsley and parmesan cheese in a large bowl.

5. Reduce the heat to low, pour the mixture into the skillet and cook until the egg begins to set.

6. Lift the bottom of the frittata with a spatula and let the uncooked eggs slide into the bottom.

7. After 3 minutes arrange tomatoes and olive slices on top.

8. Place the skillet into the oven and cook until the eggs are firmly set.
