A brunch would not be complete without eggs, and omelettes are perhaps the most versatile of all the egg dishes. Unlike quiche or frittata that is large enough to feed several people, omelettes are usually served as individual portions allowing each guest the ability to choose the ingredients he or she prefers. Some popular cheese choices used for fillings include cheddar cheese, cream cheese and American cheese. Vegetables like onion, green pepper and mushrooms are often found in fluffy omelettes. Meats like ham and bacon are right at home engulfed in eggs. From creamy cheeses to crisp vegetables to savory meats, omelettes can contain an endless blend of flavors that are suitable for any occasion and season.

The most basic omelette recipes call for eggs to be beaten with milk, cream or water and then cooked on top of the stove in a frying pan. The cooked mixture is folded in half to create delicious eggs that form a half moon shape. When additional ingredients are used, they are placed on one side of the egg before it is folded so they can become encased in the half moon. Western omelettes contain diced ham, onions and green peppers while Eastern omelettes omit the ham and add mushrooms to the mix. Both taste great on a plate or can be served between bread or in an English muffin to form a delicious breakfast sandwich. Another omelette variation is the Farmers’ omelette which consists of eggs wrapped around ham, cheddar cheese and hash browns. Whether choosing a standard recipe or using a more modern blend of ingredients, omelettes make a tremendous choice for brunches.
