Greek Potato and Feta Omelette

 

Ingredients -

2 teaspoons Extra-Virgin Olive Oil, divided
1 cup Frozen Hash Brown Potatoes or Cooked Potatoes cut into ½-inch cubes
1/3 cup Chopped Scallions
4 Large Eggs
1/8 teaspoon Salt
Fresh Ground Black Pepper to taste
1/4 cup Crumbled Feta Cheese

 
Preparation:

1. Add 1 tablespoon of oil to a medium nonstick skillet and heat over medium-high heat.

2. Add the potatoes and cook 5 minutes, stirring often, or until golden brown.

3. Add the scallions and cook for 1 minute.

4. Transfer the potato/green onion mixture to a plate and keep warm.

5. Wipe the skillet out with a paper towel.

6. In a medium bowl, combine the eggs, salt and pepper and whisk well.

7. Add the feta and the reserved potato mixture and stir well to combine.

8. Turn the oven to broil and preheat.

9. Add the remaining oil to the skillet and heat over medium heat.

10. Add the egg mixture; reduce the heat to medium-low and cook until the bottoms of the eggs are golden, which takes about 3 to 4 minutes.

11. Place the skillet under the broiler and broil until set, which takes about 2 minutes.
