Although pancakes have been around for centuries, they have come a long way since their humble beginnings. Traditional cakes combined flour, milk, eggs and spices similar to modern recipes, but were cooked on a hot stone over an open fire. Today, pancakes are a traditional breakfast food that is cooked in a frying pan or on a hot griddle. They are also frequently enjoyed for lunch or dinner and are found at most brunches. As with the original line, contemporary pancakes can be sweet or savory, depending upon the ingredients mixed into the batter or placed on top of the cooked cake. Banana pancakes, blueberry pancakes and chocolate chip pancakes are popular choices included in the sweet variety. To make a savory treat, pancakes can be topped with scrambled or fried eggs and bacon or ham.

Other variations of the basic pancake recipe include tiny Silver Dollar pancakes, buckwheat pancakes and buttermilk pancakes. Johnnycakes, or journey cakes, are unleavened cakes that are made with cornmeal, milk or water, sugar and salt. Flapjacks are made from a drier batter than most pancakes and have a thicker, denser texture. Whether serving flapjacks, Johnnycakes or pancakes, real maple syrup is a must. Maple syrup can be heated with butter, berries or jellies to make flavored syrup. Other toppings like fresh whipped cream and berries, chocolate or butterscotch chips or powdered sugar can be used in place of syrup. Jellies, jams and peanut butter can be rolled or folded inside of pancakes to make a tasty treat. Sweet or savory, pancakes are an important addition to brunch that is sure to entice everyone at the table.
