1. Turn the oven to 425 degrees and preheat.
2. Combine the first 6 ingredients in a large bowl and mix well.
3. Add the butter to a large cast iron skillet and melt over medium heat.
4. Add the apple mixture and sauté until tender, which takes about 15 minutes.
5. Add the eggs, milk, flour, sugar and salt to a food processor and process until smooth.
6. Pour the egg mixture over the apples and gently toss to let the liquid mixture reach the bottom of the pan.
7. Bake until the pancake is fluffy and golden, which takes about 20 minutes.
8. Sprinkle the powdered sugar and lemon juice on top and serve and enjoy.
