Multi-Grain Pancakes

 

Ingredients -

2/3 cup Whole Wheat Flour
1/3 cup All-Purpose Flour
1/4 cup Cornmeal
2 tablespoons Wheat Germ
2 teaspoons Sugar
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/4 teaspoon Salt
1-1/4 cups Rice Milk, Soy Milk, or Skim Milk
1 tablespoon Fresh Lemon Juice
2 Egg Whites or Substitute

 
Preparation:

1. In a bowl, combine the flours, cornmeal, wheat germ, sugar, baking powder, baking soda and salt and mix well.

2. In a separate bowl, combine the milk, lemon juice and egg whites and whisk until foamy, this takes about 30 seconds.

3. Combine both bowls and mix gently.

4. Fry the pancakes in a skillet until golden on both sides.
