Bacon and Leek Mini Quiche

 

Ingredients -

1-1/3 Cups Potato Flakes
3 tablespoons Parmesan Cheese, grated
1 cup Italian Flavored Croutons, crushed
2 Slices Bacon
1 Leek, chopped
3 Large Eggs
1/4 cup Heavy Cream

 
Preparation:

1. Preheat the oven to 400 degrees.

2. Make the potato flakes according to the directions on the package.

3. Add the cheese and stir to combine.v

4. Make 24 small balls from the mixture.

5. Roll the balls in the crushed crouton mixture.

6. Press the balls into 2 (12 well) mini muffin tins sprayed with non-stick cooking spray.

7. Cook and crumble the bacon.

8. Add the chopped leeks to the bacon drippings and soften.

9. Divide the bacon and leeks among the crusts.

10. Whisk together the cream and eggs in a bowl.

11. Divide the mixture among the crusts.
