Crustless Four Cheese Quiche

 

Ingredients -

1/4 cup Butter
1/4 cup All-Purpose Flour
3/4 cup Milk
1 1/4 cups 4% Cottage Cheese
1/2 teaspoon Baking Powder
1/2 teaspoon Ground Mustard
1/4 teaspoon Salt
5 Eggs
2 (3 ounces each) packages Cream Cheese, cubed
1/2 pound Jarlsberg or Swiss Cheese, shredded
1/4 cup Grated Parmesan Cheese

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Add the butter to a saucepan and melt over medium heat.

3. Add the flour, whisking until smooth.

4. Slowly add the milk and bring to a boil.

5. Let boil for 2 minutes, stirring constantly.

6. Remove the saucepan from the heat and let cool for 15 minutes.

7. Add the cottage cheese, baking powder, mustard and salt to a bowl and mix well.

8. Beat the eggs in a large mixing bowl.

9. Beat in the cream cheese with a handheld mixer.

10. Slowly combine the cream cheese mixture with the cottage cheese mixture and beat until smooth.

11. Fold in the Swiss and parmesan cheese.

12. Spray a 9 inch pie plate with nonstick cooking spray.

13. Transfer the mixture to the prepared pie plate.

14. Bake until the toothpick inserted into the center comes out clean, which takes about 35 to 40 minutes.
