Quiche Florentine

 

Ingredients -

1 (9 inch) Pie Crust, unbaked
2 packages Frozen Chopped Spinach, thawed and squeezed dry
1 tablespoon Olive Oil
1/4 cup Shallots, peeled and finely chopped
4 Garlic Cloves, finely chopped
1 container Ricotta Cheese
1/2 cup Sun Dried Tomatoes in Oil, drained and roughly chopped
2 Large Eggs, beaten
1/4 teaspoon Salt and Fresh Ground Black Pepper
1/4 cup Parmesan Cheese, grated

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. To a small skillet, add the olive oil and heat over medium heat.

3. Add the garlic and shallots and cook for 10 minutes or until soft.

4. Combine the ricotta, garlic and shallots, sun dried tomatoes, eggs, spinach, 1/2 of the parmesan, salt and pepper in a medium bowl and mix well.

5. Pour the mixture into the crust and sprinkle with the remaining cheese.

6. Bake for 30 minutes or until set.

7. Allow to sit for 5 to 10 minutes before serving.
