Canadian Bacon, Egg and Tomato Breakfast Sandwich

 

Ingredients -

Nonstick Cooking Spray
4 Eggs and 4 Egg Whites
1/4 cup Minced Chives
1/4 cup Minced Fresh Parsley
4 Whole-Wheat English Muffins
4-1/2 inch Round Slices Canadian Bacon
1 Large Beefsteak Tomato, sliced into 1/2-inch thick slices

 
Preparation:

1. Whisk together the eggs in a small bowl.

2. Add the parsley and chives and mix well.

3. Spray a large nonstick skillet with butter flavored cooking spray.

4. Add 1/4 of the egg mixture into the skillet and cook, like an omelet until done.

5. Slide the eggs onto a plate and repeat with the remaining egg.

6. Using the same skillet, heat the Canadian Bacon until hot.

7. Toast the muffins and fold the eggs to fit each half.

8. Top with the Canadian bacon, tomato and the other half of muffin.
