Lobster BLT

 

Ingredients -

4 ounces Lobster Tail Meat
All-Purpose Flour, for dusting
Egg Wash (1 Egg + 1 cup Buttermilk)
Coconut Breading (1 cup Panko Bread Crumbs, 1/2 cup Coconut and 1/2 cup All-Purpose Flour)
2 slices Toasted Sourdough Bread
Key Lime Mustard Sauce (recipe below)
2 ounces Shredded Lettuce
3 Bacon Strips, cooked crisp and drained
2 tablespoons Vegetable Oil for frying
Banana Peppers
Tomato Slices, cut thinly

Key Lime Mustard Sauce:

1 cup Mayonnaise
1/2 cup Dijon Mustard
1 teaspoon Chopped Fresh Parsley
1 tablespoon Chopped Fresh Cilantro
2 tablespoons Key Lime Juice
 
Preparation:

1. Pound out the lobster meat.

2. Dust the meat with flour then into the egg.

3. Lastly did in the coconut breading.

4. Add the oil to a large skillet and heat over high heat.

5. Fry the lobster then drain on paper towels.

6. Squirt the lobster with a little lemon juice.

7. Butter the sourdough bread and toast it.

8. Spread the key lime mustard sauce on both sides and top with the lobster, bacon, lettuce and tomato.

9. Serve and enjoy.

Key Lime Mustard Sauce:

1. Combine all ingredients in a bowl.

2. Cover with plastic wrap and chill until you are ready to use.
