English Muffin Breakfast Pizzas

 

Ingredients -

4 Large Eggs
1/4 cup Fat-Free Milk
1 dash Sea Salt
1 dash Fresh Ground Black Pepper
2 teaspoons Canola or soybean oil
2 tablespoons Chopped Onion
2 tablespoons Chopped Red Bell Pepper
2 tablespoons Chopped Cooked Ham
1/2 cup Shredded Reduced-Fat Cheddar Cheese
2 Whole Wheat English Muffins, split, toasted

 
Preparation:

1. Whisk together the eggs, milk, salt and pepper in a small bowl.

2. Add the oil to a large nonstick skillet and heat over medium heat.

3. Add the bell pepper, ham and onion and sauté until crisp tender, which takes about 4 minutes.

4. Pour the egg mixture into the skillet with the vegetables and gently toss.

5. When the eggs begin to set, tilt the loose egg to seep into the bottom to finish setting.

6. Stir the cheddar cheese gently into the eggs.

7. Divide the eggs between the English muffins.
